Coconut rice is a delicious side dish that is made by cooking rice with coconut milk or shredded coconut. The origin of the coconut rice comes from different countries like Colombia, Venezuela, Indonesia.

Ingredients
  • 2 cups jasmine rice
  • 1 1/2 cups water
  • 1 cup canned unsweetened coconut milk
  • 1 teaspoon kosher salt

Optional :

  • Half a cup of shredded coconut
  • Dry parsley or fresh parsley

Preparation


  1. Rinse and drain rice in cold water.
  2. Place the rice in a saucepan with water, coconut milk, and salt.
  3. Place the pot over high heat and, bring the liquid to a boil.
  4. Stir and reduce the heat to the lowest possible setting and cover the pot tightly with the lid.
    Optional : Add shredded coconut and parley
  5. Continue cooking for 15 minutes.
  6. Remove the pot from the heat.
  7. Let stand 10 minutes, covered.
  8. Fluff with fork and serve.
