Curaçao Banana Fritters (Reskuk di Bakoba)

Curaçao Banana Fritters, traditionally known as Reskuk di Bakoba, are soft, lightly sweet pan-fried treats made with mashed banana, flour, milk, cinnamon, nutmeg, and vanilla. The ripe banana gives them natural sweetness and a tender texture, while the warm spices add a comforting Caribbean aroma. Enjoy them on their own with a cup of tea or serve them alongside a meal.
Ingredients
- 1 cup finely mashed banana
- ½ cup white sugar
- 1 cup all-purpose flour
- A pinch of salt
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- ½ cup milk
- 1 tablespoon melted butter
- 1 beaten egg
- 1 teaspoon vanilla
- 1 cup vegetable oil
Preparation
- Begin by mixing the finely mashed banana with the sugar and salt.
- In a separate bowl, combine the milk and melted butter.
- Mix the flour with the cinnamon and nutmeg.
- Add the flour mixture to the mashed banana mixture and stir until well combined.
- Pour in the milk and melted butter mixture and stir thoroughly.
- Add the beaten egg and vanilla, then mix again until the batter is smooth and well combined.
- Using a piece of paper towel, lightly coat a frying pan with vegetable oil and allow the pan to heat.
- Once the pan is hot, spoon a small amount of batter into the pan.
- Cook until the bottom is golden brown, then turn the fritter over and cook the other side.
- Repeat with the remaining batter until all the banana fritters are cooked.
- Enjoy the fritters plain with a cup of tea, or serve them as a side dish with a meal.
