Pineapple-Lime Congealed Salad
Information
Pineapple-Lime Congealed Salad, or molded salad is a salad made with flavored gelatin, fruit, and sometimes grated carrots or more rarely, other vegetables. Other ingredients may include cottage cheese, cream cheese, marshmallows, nuts, or pretzels. These salads were popular in the 1960s.
Ingredients
- 4 serving-size packages lime-flavored gelatin
- 1 cup boiling water
- 1 can (20 oz) crushed pineapple with juice
- 1 container (8 oz) small-curd cottage cheese
- 1/2 to 1 cup chopped walnuts or pecans
- 1 pint sour cream
Preparation
- Dissolve the gelatin completely in the boiling water. Let it stand until cooled.
- Stir in the crushed pineapple with its juice, cottage cheese, and chopped nuts.
- Gently fold in the sour cream until evenly combined.
- Pour the mixture into a lightly oiled mold or a 9 × 13-inch pan.
- Refrigerate for at least 2 hours, or until completely set.
- Serve chilled. Makes approximately 15 servings.
