Lumpia are crispy, savory rolls filled with a flavorful mixture of chicken, shrimp, ham, bean sprouts, Chinese cabbage, celery, green onions and peppers. This Caribbean-style version combines Asian-inspired seasonings such as sambal, trassie and Maggi with homemade thin wrappers that are rolled around the filling and fried until beautifully golden and crisp. Serve them hot as an appetizer, party snack or alongside your favorite dipping sauce.

Ingredients
- 3 packages bean sprouts
- 1 package celery
- 1 package green onions
- 1 package Chinese cabbage
- 2 bell peppers
- 1 teaspoon Vetsin (MSG)
- 1 tablespoon vegetable oil
- 1 can shrimp
- 1 lb. chicken breast
- 1 tablespoon onion powder
- 1 bouillon cube
- 1 tablespoon garlic powder
- A little sambal goreng
- A little sambal oelek
- 1 teaspoon trassie (shrimp paste)
- A little ketchup
- 1 oz. ham, diced into small cubes
For the Homemade Wrappers (Flensjes)
- 12 eggs
- 12 tablespoons flour
- 24 tablespoons water
- 1 teaspoon butter
For Coating Before Frying
- 1¼ cups water
- ¼ lb. flour
- 1 teaspoon Maggi seasoning

Preparation
- Cook the chicken with the seasonings and vegetables such as tomato, onion and bell pepper until the chicken is tender.
- Allow the chicken to cool, then cut or shred it into very small pieces.
- Sauté the vegetables in a small amount of vegetable oil.
- Add the diced ham and shrimp to the vegetables. Add the ketchup and Maggi seasoning and allow everything to simmer briefly.
- Add the chopped chicken and mix thoroughly. If you enjoy spicy food, add sambal goreng and sambal oelek to taste. Remove from the heat and set aside.
- To prepare the homemade wrappers, thoroughly combine the eggs, flour, water and butter until you have a smooth batter.
- Lightly oil a frying pan and heat it over medium heat.
- Pour a small amount of batter into the pan and spread it into a thin pancake. Cook lightly on both sides, similar to making a thin crepe.
- Place the finished wrappers on greaseproof or parchment paper and allow them to cool.
- Place some of the chicken and vegetable filling onto each wrapper. Roll tightly into a lumpia shape and secure with a toothpick if necessary.
- In a bowl, combine 1¼ cups water, ¼ lb. flour and 1 teaspoon Maggi seasoning.
- Dip each lumpia into the mixture and fry in hot vegetable oil until crisp and golden brown.
- Drain on paper towels and serve hot.
