Sult is a traditional Curaçao appetizer made with tender strips of pig ear marinated in a bright, tangy pickle. Often prepared for New Year celebrations, it is served chilled as a distinctive Antillean holiday dish.

Ingredients
  • 2 lbs of salted pork ears
  • 2 teaspoon of cloves
  • 2 cloves of garlic
  • 2 bay leaves
  • 1 hot pepper. (choose pepper based on heat preference)
  • 1 bottle of vinegar
  • 2 onions

Preparation


  1. Put the salted pig ears in a bowl over water overnigt. Make sure all the ears are completely submerged.
  2. Next morning rinse all the ear thoroughly and remove as much of the salt as you can.
  3. Boil the ears for about 1 hour or until the ears are tender.
  4. Rinse the ears again thoroughly with cold water.
  5. Slice the ears with a width of 0.4 to 0.5 inches.
  6. Slice the onions to form onion rings.
  7. Chop the garlic
  8. Chop the hot pepper
  9. Put a pot with water to boil. Enough water for all the ingredients to be under the water.
  10. When water comes to boil put all the ingredients into the water for a couple of minutes
  11. Remove content from heat and pour the vinegar into the pot and let them cool off. Make sure there is enough vinegar to keep all the content under the vinegar.
  12. After it all cools of, refrigerate overnight.
