Supreme Potato Salad is a rich and colorful potato salad made with tender potatoes, ham, hard-boiled eggs, pickles, carrots, onions and bell peppers, all brought together with a creamy garlic-mayonnaise dressing. Served chilled and beautifully garnished with sliced eggs, tomatoes and lettuce, it makes an excellent side dish for family gatherings, parties, barbecues and special occasions.

Ingredients
- 2½ lbs. potatoes
- ½ cup finely chopped onion
- ½ red onion, finely chopped
- 1 green bell pepper, finely chopped
- 1 red bell pepper, finely chopped
- 4 green onions, finely chopped
- 2 cloves garlic, peeled
- ¾ cup mayonnaise
- ½ carrot, finely grated
- 2 cups ham, cut into small cubes
- 6 pickles, thinly sliced
- 4 hard-boiled eggs
- Lettuce, for garnish
- 1 tomato, thinly sliced, for garnish
- Salt and pepper to taste

Preparation
- Boil the potatoes in salted water until cooked but still slightly firm. Do not overcook them.
- Allow the potatoes to cool. Peel them and cut them into bite-sized cubes.
- In a bowl, combine the mayonnaise with the crushed garlic, green onions, red onion and regular onion. Season lightly with salt and mix well.
- Add the finely chopped green and red bell peppers. Mix well, taste and adjust with salt, pepper or a little additional mayonnaise if needed.
- In a large bowl, combine the potatoes, ham, 2 chopped hard-boiled eggs, sliced pickles and grated carrot.
- Add the mayonnaise mixture and gently toss everything together, taking care not to break up the potato cubes.
- Transfer the salad to a serving dish, arrange it neatly and refrigerate for approximately 2 hours.
- Before serving, slice the remaining 2 hard-boiled eggs and arrange them over the salad. Garnish with tomato slices and lettuce around the edge.
- Serve the Supreme Potato Salad well chilled as a side dish.
