Preparation
- One day before cooking, place the oxtail and salted meat in a pot with enough water to completely cover the meat. Allow them to soak overnight.
- When ready to cook, drain and thoroughly rinse the meats two to three times.
- Clean and rinse the goat meat thoroughly.
- Place the oxtail, salted meat, and goat meat in a pot with the butter, onion, garlic, nutmeg, and tomato paste.
- Add enough water to reach approximately four finger-widths above the meat.
- Meanwhile, thoroughly wash the Swiss chard and keep it covered in a bowl until needed.
- Once the meats have cooked for a while and are beginning to become tender, add the Swiss chard, potatoes, and annatto.
- Stir everything together and continue cooking. After adding the Swiss chard and potatoes, the water should be approximately level with the meat and remaining ingredients.
- Continue cooking until the potatoes are tender and the stew has developed a rich consistency.
- Serve the Warmoes Stobá with yellow or white funchi, or with rice.
