Ingredients
  • 2 packages Swiss chard
  • 1 lb salted meat
  • 1 lb oxtail
  • 1 lb goat meat
  • 1 tablespoon butter
  • ½ onion
  • 3 potatoes
  • 1 teaspoon garlic
  • 1 teaspoon nutmeg
  • 1 tablespoon annatto
  • 1 tablespoon tomato paste

Preparation


  1. One day before cooking, place the oxtail and salted meat in a pot with enough water to completely cover the meat. Allow them to soak overnight.
  2. When ready to cook, drain and thoroughly rinse the meats two to three times.
  3. Clean and rinse the goat meat thoroughly.
  4. Place the oxtail, salted meat, and goat meat in a pot with the butter, onion, garlic, nutmeg, and tomato paste.
  5. Add enough water to reach approximately four finger-widths above the meat.
  6. Meanwhile, thoroughly wash the Swiss chard and keep it covered in a bowl until needed.
  7. Once the meats have cooked for a while and are beginning to become tender, add the Swiss chard, potatoes, and annatto.
  8. Stir everything together and continue cooking. After adding the Swiss chard and potatoes, the water should be approximately level with the meat and remaining ingredients.
  9. Continue cooking until the potatoes are tender and the stew has developed a rich consistency.
  10. Serve the Warmoes Stobá with yellow or white funchi, or with rice.
