Kala (Black-Eyed Pea Fritters)

Ingredients
- 1½ pints (3 cups) black-eyed peas
- 2 egg whites
- 1 teaspoon salt
- 1 piece hot pepper (use more or less according to your preferred level of heat)
- Vegetable oil for frying
Preparation
- Soak the black-eyed peas in water overnight, preferably until the following morning.
- The next morning, drain the peas and remove their skins.
- Once all the peas have been peeled, grind them very finely using a meat grinder.
- Add the hot pepper and grind it together with the black-eyed peas.
- Beat the egg whites and add them to the ground black-eyed pea mixture.
- Beat the mixture thoroughly until it becomes lighter and airy.
- Heat enough vegetable oil for frying in a deep pan.
- When the oil is hot, use a tablespoon to carefully drop small portions of the mixture into the oil. Fry the Kala until beautifully golden brown.
- Remove the Kala from the oil and place them on a plate lined with paper towels to absorb the excess oil.
- Serve the Kala hot and enjoy!
