Ingredients
  • 1½ pints (3 cups) black-eyed peas
  • 2 egg whites
  • 1 teaspoon salt
  • 1 piece hot pepper (use more or less according to your preferred level of heat)
  • Vegetable oil for frying

Preparation


  1. Soak the black-eyed peas in water overnight, preferably until the following morning.
  2. The next morning, drain the peas and remove their skins.
  3. Once all the peas have been peeled, grind them very finely using a meat grinder.
  4. Add the hot pepper and grind it together with the black-eyed peas.
  5. Beat the egg whites and add them to the ground black-eyed pea mixture.
  6. Beat the mixture thoroughly until it becomes lighter and airy.
  7. Heat enough vegetable oil for frying in a deep pan.
  8. When the oil is hot, use a tablespoon to carefully drop small portions of the mixture into the oil. Fry the Kala until beautifully golden brown.
  9. Remove the Kala from the oil and place them on a plate lined with paper towels to absorb the excess oil.
  10. Serve the Kala hot and enjoy!
